In January 2024, ONIMA spent time in Yucatan, Mexico. Seafood and pork cooked in banana leaves define the cuisine of Merida and of course we were very inspired by the black sauces that are served alongside. FAR BELOW is a collaboration with our friends, METL, to produce a sauce as black as night and the intensity to match. Recommended for tacos al pastor, micheladas, or any crudo form of fish. This is a sleeper hit.
