Summer Sizzle: Kumquat Aji Amarillo Fish & Chips

Fried fish, chips (French fries), and tartar sauce. The only thing that could make this combination better is a kiss from the sun- in the form of hot sauce. Kumquat and rum will bring the zing to your fish & chips lunch.


  • White fish such as cod or pike
  • Russet potatoes
  • White vinegar
  • Sour pickles
  • Capers
  • Mayonnaise
  • Whole grain mustard
  • Flour
  • A can of beer
  • Neutral oil
  • Salt
  • Pepper
  • Paprika
  • NAGAMI TEST hot sauce


  1. Peel and slice potatoes into fries
  2. Starting from cold water, simmer the potatoes in salted water seasoned with some white vinegar
  3. Cook potatoes until barely knife tender. Drain and reserve
  4. Dice up capers and pickles. Toss with mayonnaise, vinegar, mustard, salt, pepper, and NAGAMI TEST hot sauce
  5. Season flour with paprika, salt, & pepper
  6. Prepare a beer batter by combining flour and a light beer
  7. Dredge the fish strips in the seasoned flour before coating in the batter
  8. Fry in 350° F oil until golden brown and crispy
  9. Repeat with the potatoes
