What is sumac?
Sumac is a spice made from dried berries, widely used in Levantine cooking. Its tart, fruity flavor gives this sauce a different kind of brightness alongside the vinegar.
Can I cook with it?
Yes. Use it where you would normally reach for a Louisiana-style hot sauce: in wing sauce, dressings, stews and dipping sauces. Add a final splash at the table to keep the tartness up front.
