Open them mild to extreme. Start with Cajun Sumac on a soda cracker or a thumbnail of buttered baguette to calibrate. Climb the ladder one bottle at a time. Drink milk or eat plain yogurt between Scorpion Koji and anything else. Don't blow through it in one sitting β these are cooking sauces, not Hot Ones props.
Which sauce should I open first?
Depends on the meal in front of you. Eggs and beans want Cajun Sumac. Pizza wants Prismatic. Grain bowls and tacos want Mole or JANG. Anything grilled wants IL MIG+. Scorpion Koji is the dare bottle β open it last, use it sparingly, and respect what it is.

IL MIG+ Hot Sauce β 6/10
Featured on Season 24 of Hot Ones. Spanish in soul, koji in technique. Fermented red habanero, roasted koji, sherry vinegar, and olive oil. Smoky and savory with a floral lift from the oil. The koji is what makes it different from every other habanero sauce on the shelf.

JANG Korean Fermented Hot Sauce β 5/10
Fermented in handmade onggi vessels by potter Adam Field. Gochujang and doenjang form the umami backbone. Loquat and black garlic vinegar carry the brightness. This is a cooking sauce β stir it into stews, fold it into mayo, glaze it over short ribs. Don't waste it as a finishing splash.

Lemon Ginger Jerk β 4/10
